All it takes to hook a console up to a PC is a good video card with the appropriate jacks.
where do you get them at?
The set-up we used was a little different than that, actually (although you can do it with a Video card with the proper inputs, or a Video capture card). What we did is we hooked up regular console VGA boxes to each pair of systems, and then on the monitor output for each respective box, plugged in a VGA splitter so that it would output to both simultaneously. This way, we were able to avoid any lag that would happen as a result of PC slowdown–the consoles were hooked up straight to the monitors, basically. The consoles were not routed through the PCs at all. It works out since we weren’t allowed to modify the PCs anyway (which are University/Lancave property). I always did it with my video card, but I could certainly see how going straight into the monitor would be very good thing. Were you all using normal monitors or flat screens? I’ve never tried MvC2 on a flat screen and I’d very much like to see it sometime. 
Ohh and to answer the question, some good video cards for your PC can be found at almost any decent electronics store. Best Buy and Circuit City stock a large variety of them and unless you’re going into PC gaming just find the cheapest one you can with the appropriate jacks and get that one. Perhaps an old All-In-Wonder card would do you good. Of course if you’re not familiar with any of this then I advise against this course of action and you should just stick with a TV to avoid the following scenario. :tup:
