My thing is your example would be like me getting offended for someone calling me black and making it equivalent to being compared to a slave or some other older term. Caucasian is probably not “correct” and its too broad a term (I did some googling) but the current usage is the equivalent. No-one would use the term nowadays to refer to “mountain men”. I still think its a bit better than using different tones to refer to races.
And out of curiosity, what WOULD you call yourself?
