Wolverine and Wesker are two of the most easiest, beginner friendly characters in the whole game. As for a third, try picking someone like Akuma or even Hawkeye for a good assist. Hawkeye’s instant super is one of the best supers in the game that can punish anything that isn’t blocking.
Like in every game he’s in Ryu is good. Particularly when he comes in with meter.
He’ll teach you how to punish assists. With a well placed Shinkuu Hadoken. He’s straight forward, has a spamable cr L simple enough combos. His assists aren’t spectacular but workable.
I think Dante might be good on basis of his versatility. You can play rush down and some keepaway with him. He makes a good point man. Sure. His sheer amount of moves is overwhelming. But a quick trip to training mode is plenty of time to get acquainted.
Wolverine is good. Like previously mentioned he’ll teach you combos.
I think Morrigan has a purpose. She has an easy flight cancel with air soul fist xx flight xx soul fist. Perfect for playing keep away for a bit. Her dash turning into an air dash will teach you the importance of dashing at opportune times. Her Dark Harmonizer assist is also abusable to build meter.
Wesker. Solid otg assist for combo extension. Excellent standalone character who doesn’t need meter. Safe launcher. Solid command grab for mixups. Extremely dangerous with or without x factor.
Hey, here’s an idea. Fuck all this “Play this easy mode team” nonsense. Pick the shit you like, and make that shit work. Tell me the top 10 characters you love in this game, and I’ll tell you the best combinations for those. Please be sure to list them in order.
I can’t suggest anything for you, because to me, its always up to the player to make his/her own team.
Don’t listen to the top-tier nonsense, pick what you like and try to make something out of it.
If you’re stuck with adding characters to your team, try out other characters(even low-tier can make a difference) in mission mode & seeing how they work in videos.

Your favorite three seem ideal. none have super duper difficult combos and they all seem to have their own strengths, Mr hit like a truck, Mr dormammu and, eat chain.

Not only should your team be such successful/synergistic but you need a team that suits/enhances your playstyle.
For example I like rushing and mixing up so I play Spider-Man with web ball(reset potential), Dante with jam session(which side do you block if I mix up my dashes under you when you come in?) and Wesker with otg gunshot(unblockables with spidey mostly).
OP you should pick a playstyle you like and enhance your talent for that playstyle with a good team.
Weske(b) Nova(a) Sentinel(a)… nothing too hard, everyone hits pretty hard, doesn’t take much work
Wesker(b) Ryu (y) Sentinel (a) is probibly the easiest team in the game to play right off of the bat. Good team for learning basics
Magneto (a) Storm (y) Sentinel (a) pretty damned good basics team for learning fundimentals as well, best team DHCs in the game
Doom (beam or rocks) Dormammu (a) Wesker (b) Doom takes work here, but this team is too solid to ignore.
Hulk(b) Nova (b) Iron-man(b) is a solid team overall if you don’t want to play top tiers
Vergil(a) Zero(a) Sentinel (a) looks about as solid as it gets, it’ll teach you to protect your assists for sure
But all in all, just pick what you like, make it synergize and have fun.
Try VJoe/Rocket Raccoon (Spitfire Twice)/Amaterasu (Cold Star)
Spitfire Twice is a good approach assist for Joe, and then Cold Star locks down for instant overheads or fast lows with either of your other characters.
Most def try Ghost Rider/Nemesis/Dormammu, probably in that order too. Heartless Spire assist with Ghost Rider, Dark Hole with Dorm, and Launcher Slam with Nemesis. Learn some combos and stuff, and get to playing. I’d list more teams, but since those are your top 3, and they should work well together, I don’t see the point.
I can see Iron Man and Chris working together. Unibeam’s a great assist, so all you need is a third character.
El_Maiz has this right. V.Joe/RR/Ammy, with the aformentioned assists.

The problems with teams like “Joe/RR/Ammy” is they fall apart when joe gets snapped to the back, and ammy gets killed.
One of the hardest things about finding a team is having it work in every order, and every character being able to DHC into each other properly. (Not to mention Joe XF3 is very weak compared to most other characters)
That’s pretty much saying that you shouldn’t play Joe at all, which is not really helpful, if we’re trying to make a good team with Joe/Ammy.
Anyways, on the Iron Man/Chris discussion, try Chris/Spencer/Iron Man. Or with Spencer as anchor.
Repulsor Blast helps to control the airspace, which Chris has trouble with, and Spencer regrounds them for Grenade Launcher to connect fully and let you combo afterwards. Spencer’s assist doesn’t help Iron Man as much as it helps Chris, but Iron Man and Spencer don’t really need assists to be effective, and Chris does, so using assists for Chris is probably more important than selecting the best assists for Iron Man.
Throw Taskmaster on your team, he has good health, great pokes, reliable combos, great damage and really good assists. Throw him in the back with that assist and then put 2 characters you are interested in learning and try and make them work.

I hope this isn’t scrubby to ask, I got the game today and trying to find a team to get a feel for it. Here’s the catch, I’m absolute trash at doing DPs. It’s always been a weird tweak I have. I know I need to practice this no matter what, but are there characters where a DP isn’t as important / not essential to the game plan? And if so, what kind of team would that look like? I’m not really playing favorites at the moment.

Ghostrider?, Doom, Taskmaster, Hawkeye, Sentinel
If you want the EASIEST zoning team ever try Ghost Rider/Hawkeye/Sentinel or Hawkeye last. It’s like the Wolverine/Wesker/Akuma of zoning. I am not kidding. It’s actually pretty good, Combofiend even won with it at WNF.
My sister has much the same problem.
I also enjoy zoning, so try someone who doesn’t require DPs for their zoning. Sentinel, Deadpool, or Trish all can do this. Hawkeye can probably get by without DPs, Taskmaster is great for that, his DP motion move is kinda crappy.
Magneto has a pretty good lame game, Cap can play patiently with his shield slashes.
