I want to be clear that I did not go into the game wanting to knock the graphics. I’ve played games like vvvvvv, Axiom Virge and Hotline Miami that did the retro thing and did it well. I think it’s a valid style. You can embrace those self-imposed limitations, but it’s important to expand on it and try something new. Otherwise, what’s the point?
In Undertale, they were trying to replicate an aesthetic from an era where developers had to deal with financial, technological and (most likely) artistic limitations. At the time It was endearing, not simply because it was somewhat amateurish, but because the developers were trying something completely new and succeeded in conveying their vision on an etch-a-sketch, so to speak.
To try and reverse engineer something that happened out of necessity because you want to reproduce a look that left an indelible mark on you (or that you think other people think left an indelible mark on someone at some point in time) is something different. Instead, it feels like you’re picking out this quaint, technological relic and presenting it as something novel and edgy. Without the context, it doesn’t have the same impact.
Basically, your graphic style shouldn’t be bland just for its own sake. That’s lazy.

Holy shit The Revenant is a really fucking sick movie. Im going to remember this movie for a long time. Has one of the best scenes of all time. Near the beginning of the movie Leonardo DiCaprio fights a fucking grizzly bear.
