Is it possible to mod a stick to work on both Xbox One and PS4 and or possibly a converter that might work?
I have been playing Killer Instinct on my One with a pad and only have a stick for PS3/4.

The easiest thing to do would be to replace the PCB in the stick to a Brook Universal board:

Yes, it’s called a Dual Mod. There several ways to do this.
Easiest way is to use a Brook Universal Fight board, as it supports both the PS4 and Xbox One (as well as the PC, PS3, Xbox 360 and Nintendo Switch).
you can also get a brook super converter to make it work with the consoles you want…
you can even buy a converter for ps3/4 controllers to Sega Dreamcast
