Kokuoh was my favorite until Bucefalo came in, a horse that eats human flesh who can decimate entire squadrons of enemies with his hooves? yes please. He is practically the evil twin of Kokuoh
Edit, if we are going to mention video game horses then Agro from Shadow of the Colossus takes the cake.
Also lets not forget the unamed? horses of the Sengoku Basara generals, specially Date Masamune’s horse
