We do not use grills, but some sort of spits with no rotary devices. It is similar to a stabbing sword.
The traditional BBQ in Brazil and Argentina takes no sauce, actually, just salt. The idea is that the flavor of each cut is distinguishable, and the best ones should not be altered. Ribs are my favorite, and the most traditional cut in the South, where BBQs are part of the culture. People often leave back ribs on the coals for several hours, so it gets soft to the point you can simply pull a bone without the aid of a knife. Many people like “picanha”, which I think is called rump roast in US. I may be wrong. The latter is a soft meat with a cover of fat, and has a strong flavor. It is much easier to make BBQs with them.

I’m only just now getting a career so it’ll be about 3 years from now.
I’ll look into those brickmade Grills you are talking about.
I plan to grill every weekend during the American Football season, and once a month otherwise.
