Why do I never see people falling on fast fireballs? Why does ryu use tatsu airlift if neutral jumping slow fireballs is so easy that you can just see it and then jump?

Tatsu Airlift is crucial for building meter quickly vs most projectile characters. I’m constantly trying to build meter even if I take a hit or 2. Ryu has many match-ups where if you don’t build meter quickly you get crushed (Dhalsim,Chun,Osagat, Mirrors). I do it anyway even if I have full meter because its easier than neutral jump and its a habit. Of course I fly around the screen more than most and it sometimes get me in trouble.
