I don’t believe every ending has to be canon. You can still create and advance a coherent story even if many of the events portrayed in character endings did not happen exactly the way they were portrayed.
The key is perhaps simply to decide on the coherent “real” story, to build around that “real” story, and to preferably eventually inform players of the “real” story. If you want extra game modes, then have a “real story” game mode that specifically tells the real story. If you haven’t quite worked matters out, have the next game in the series recap the “real” story. If you want to go multimedia, do a spin-off anime that tells the “real” story.
Non-canon endings can even be beneficial in that they give the creators more chances to establish how characters act through “what-if” scenarios. This can be particularly useful for more minor characters that may not get much focus in the canon story, but can help even with major characters. The key here is to make the non-canon endings still fit the characters.

Teachers prefer to teach in person too. I have to conduct piano classes via webcam now and it fucking sucks having to explain music theory online.

I’m limiting myself to still images.Bone animations are tough and a lot of the prefabs don’t work with imported models. I made this up today and actually using it as my wallpaper.

Of absolutely no relevance to anything… live webcams of wilderness and background noise is something I never realised would be so relaxing, especially for anxious fucks like me. (Right now there are no elephants, as it’s night time, but the background noise is superb)

Maybe you missed the lead-in to that sentence you quoted.
It’s not that every arcade ending has to be canon.
If the only story content your game has is an Arcade Mode, then all arcade endings have to be canon.
There’s a simple reason for this. If you make a non-canon ending in these circumstances, the audience literally has no canonical path for that character.
This is a problem in many of the older SF games and by extension, their SFV retreads.
