Medium rare for the thicker cuts and rare for the thinner ones(<1" thick) is how i eat em. i get my burgers medium since i like a little pink in the middle.

To each their own, if someone enjoys a well done steak let them enjoy themselves, it’s not hurting you. As a picky eater I find it hilarious how offended people get over me disliking some foods. I’ve had people act less offended at their religion getting bashed then me say something like “I don’t like cheese”. Even that statement alone will cause no less then three people in here to flip out.
I prefer a medium to medium well, I want pink in the middle with clear juice. The texture plays a big part of it too, and when cooked right it’s amazing. I’ve noticed that most women prefer their meat more well done than guys. Also if you go to a chain restaurant or a crappy one, whoever orders the most well done piece of meat will trump everyone else’s order and that will be what’s used for them all. Three people can order rare, one well done and they’re all exactly the same well done, but if that one person ordered a salad instead the other three would have their rares
One of the better steak houses here in Seattle has a disclaimer saying that their “well done” will still have some pink in the middle. Rightfully so, no reason to burn a good piece of meat like that.

For the record, I order medium-well. But from what I was told, the general standard for cooking steaks is an Italian American thing which has become apart of American culture as a whole.

I’ve never had a really REALLY good steak. I see pics and vids of crazy shit in the states, and I get jelly. We have really good steakhouses here, probably nowhere near the level of yours, but damn would I LOVE to try a meal that is only steak and toppings

Beef ribs are mad good, but there is just something about the texture of pork I like so much more… and it absorbs seasonings and shit better, fat isn’t tough as fuck, etc.
I love both, but eating beef ribs makes me feel like Fred Flintstone and this is a good thing.
My condolences you’ve been eating improperly cooked steak. A well cooked medium rare steak (3:30 on each side on high heat (about 400) should have a nice crust to contrast the juicy center. If you cut, poke, or even look at a steak before it rests for at least 5 minutes that would explain the overly soft texture.
99% of restaurants think medium rare is is medium. There should be a red center with pink towards the outside like this not just a little pink like this.
It’s not going to kill you but ordering medium rare almost all the time isn’t a good idea.
medium rare = WARM RED center, rare is COOL red center. they should both be red though, only difference is temp, fortunately most places that i would ever consider ordering a steak from has it just like your pics haha

I don’t think I’ve ever eaten steak more done than medium-rare. I almost always eat my steak as rare as they will make it.
If you want a good steak, get a goddamn meat thermometer(or it’ll never come out right) and your own steaks… but the meat thermometer is very important… don’t have that, don’t bother… if you’re going to buy an expensive cut of meat, go all out in making sure its right…
Buy the steak only when you plan on eating it that day or the day after… marinate that shit in a bag or something for a good while… fucking amazing(I’m sure you know how to grill onions and mushrooms to go on top) …
