If you want something more realistic and authentic looking then the 3d fighters are best to look at. Bruce from Tekken, Brad from VF and Zach from DOA. I like the look of VF5FS Brad the most by far

Not as many as should be by rights, given the martial art is arguably the only traditional discipline that actually works in real life.
Just goes to show how little fighting games developers know about martial arts proper. Most of their knowledge is limited to watching chuck Norris schlock in their mothers’ basements while stuffing their obese faces with twinkies. Hence the S/SF4, MVC, Tekken et al turds that flood the market. On the rare occasion you do get a Muay Thai character, they’re usually of the projectile spammer variety.
Depends what you mean by traditional to begin with, the modern Muay Thai which most real fighters use didn’t even exist until 1920s or so, and has obviously lots of influence from western boxing. And jujutsu of course is widely used and could similarly be called ‘traditional’, although again no-one uses the actual traditional versions in the ring nowadays… Of course wrestling of any kind is pretty much the most traditional fighting form anyway.
Just to be fair, most muay thai practioners nowadays do sport muay-thai. You should see Tony Jaa, he does the original version of the martial art, called Muay Boram. Its extremely violent, and was the martial art used by the Thai armies, similar to Krav Maga or sambo.
