I wanna convert my mp4’s to mp3’s but I don’t know which free converter programs have spyware on them and which don’t. Anybody know of one from experience.

I would stick to Open Source (sometimes also called Libre/Free Software depending on license; GNU Public License Version 2 or Version 3 etc) if you want to avoid spyware and low-quality adware - it isn’t a blanket guarantee, but greatly enhances software quality and your privacy in this regard. Some examples of Free and Open Source software include the Firefox browser and LibreOffice.
Regarding what you requested, here are two options. First, Handbrake - www.handbrake.fr - is an easy to use converter and encoder for many formats! Give it a try.
Second, you can actually use the popular and high quality media player VLC - www.videolan.org - to do simple conversions and MP4 (audio alone or video/audio) to MP3 (audio) should be easy. In the main “Media” dropdown menu there is a “Convert/Save” option. Should do as you wish.
Audacity, as recommended by SirSnuggles above, is also another good open source option for audio editing, encoding, and conversion . Its editing features can make things a little more complex, but you can ignore most of those and stick right to conversion.
