Most arcade sticks are advertised for PC and such, anyone knows of a good arcade stick that works on Mac/OS X?
Get one that works as a Universal Human Interface Device, it is like a mouse, which works on all OS and all chipsets.
Most Hori PS3 sticks are built this way. Sticks using Cthulhu or ChImp for PS3 are this way. Madcatz Chun Li PS3 TE is this way. Other PS3 TEs are not.
There are 360 drivers for mac out there, but I’ve never had a good experience with them.

You’re probably best off following Narrage’s advice to begin with.
However for the sake of completeness, I’d like to point out even the more infamously problematic of Madcatz’s PS3 T.E. sticks worked on both of my Intel macs in OSX for me without any third party drivers. The only problem is that they’re not playing nicely with bootcamp on my 2011 Macbook Pro for some reason which has to do with a USB 1.1 quirk if I recall correctly. You’ll probably want Windows compatibility since the number of joystick capable games is rather small in OSX, unless you actually know a thing or two about how to use Wine (unlike me). The problem isn’t universal though, my 2008 24" iMac really didn’t give a fudge when it came to Windows X.P.
If you’re on Snow Leopard, I can guarantee you that any 360 stick will work on your Mac if you download the edited drivers on this site.
Both my PS3 SE and TE-S work on my Snow Leopard Macbook Pro (2008) without needing any drivers. I use both of them on MAME without any issues.
They both work on Windows 7 in Bootcamp as well if you plan to use them on W7 as well.
PS3 Real Arcade Pro. 3 Premium VLX or the PS3 Real Arcade Pro.V3 SA work as Universal Human Interface Devices?
