All of the non simple fighting games on the list have an option to set special moves to one button, or disable special moves all together.

Xrd SIGN does not have any such option.

Do the latest Guilty Gear games have Auto Mode?

I believe they added stylish mode in Revelator.

I need more detail critera because right now we can list bunch of anime license games such as
Samurai Deeper Kyo
DBZ Budokai series (ps2)
One Piece grand Adventure/burning Blood (multi)
Saint Seiya Soldier souls (Multi)
Zatch Bell Mammadoo battle (Multi)
Shijou Saikyou no Teishi: Kenichi ( ps2)
Zoids Full Metal Clash (gamecube)
and then some

but IMO
Phantom Breaker: extra (ps3/360) is the best one that have simple controls and yet traidtional mechanics and rules set for fighter.

Before I add any of these games can you please describe them a little bit more. Do they all have one button special moves?

as mention i need you to clarify your critiera as special moves because the one on the OP list is too broad.
first off all these game only have button attacks so that technically fits in your ā€œbutton specialā€ now tecnically some have keybinds for specials meaning two button press is needed.

example
Saint Seiya soldier souls require player to hold ā€œcosmosā€ button and then press any attack button to do character specials.

other is matter of pressing button with singular directions

For example Phantom Breaker/Samurai Deeper kyo have SP button and pressing Foward and Sp button will do a special.

The criteria is usually one button special moves. But the full criteria is any 1 on 1, non-mobile fighting game that does not require special move motions. The whole idea is minimizing what has to be explained to a new player or minimizing skill that takes advanced motor skills. Hold and release one button special moves count, as well as one button plus direction special moves.
