“Evo-standard” to me is a perfectly legitimate reason. But even beyond Evo, ALL major tournies use PS3, so it’s just a wise idea to keep everything uniform. A lot of it does have to do with people having compatible sticks/pads. When it comes to games like Tekken, for instance, there are a LOT of pad players out there, so Xbox just won’t cut it.
And from a TO perspective, if you’re throwing a large event, it’s super easy to have everything on one console. I’ve never run into PS3 lagging to the point of it being a major issue. For small events, like our monthly, I’m cool with people using Xbox. In fact, I’m pretty sure Grog is gonna bring his. But I like to have a ground rule so that if 2 players have sticks/pads for different systems it’s easy to rule on one side or the other.
Xiang what you are missing there is that majors use PS3’s because EVO Uses PS3’s and if they are going to be EVO qualifiers they have to have the exact same format. The only reason they haven’t switched is because Mr Wizard isn’t about to buy hundereds of 360’s to replace the PS3’s that already work (kind of, if sony lets them, and isn’t letting our info get stolen).
Honestly there’s no good reason not to make 360 the standard, sticks are readily available via TE’s, Dual Modding, and fightpads are made for both system for pad-warriors.
Basically, there’s little to no arguement that the 360 is a way better system for not having slowdown and random input lag in the games, that alone should be good enough reason to use it over a PS3 for tournies, but the standard has been set and most people are gonna let a little thing like “logic” change that anyway.
TL : DR We SHOULD be using 360’s, but it’s not gonna happen so sucks to be us.

I do have to disagree with the pad argument when it comes to type. Being a pad player, PS pads are far superior to anything that is made for the XBOX. The only viable option you have is to get a PS2/1-to-XBOX converter, which tend to be junk. I guess the pad argument is somewhat moot anyway because EVO requires wired controllers/sticks, so you have to get an old PS2/1 pad and a converter. Although, that isn’t true for most majors. As long as it worked, I wouldn’t mind the converter route. Honestly, though, I’ve never even tried out a PS pad on an XBOX so I don’t know if there’s any lag or anything weird.
