I have three different themes. One I would create as a horror based themed, another would be a sci-fi themed and one more would be fantasy style themed fighting game. Or should I just combine all the themes into one fighting game? Let me know which choice you guys like the most.
It depends on what you have in mind for gameplay. I would prefer a less projectile focused, footsie heavy type of fighter with fantasy/historical elements. However, if your art skills are weak in that department or you don’t personally find it engaging go with what interests you as it is your time you are spending as an investment.
P.S. Also check out the competition (Omen of Sorrow, Punch Planet, Fantasy Strike, ect.) and figure out what you can do better and what you can add that they do not offer.
Melty Blood is fucking awesome. I have fond memories of that game. When my room mates Dreamcast broke and we couldn’t play mvc2 we played Melty on PC. Good times.

Also, this type of poll is rather pointless, unless you outline some sort game mechanic or hook for each are we supposed to imagine what this fighting games would be like? e.g 5 people like dogs, 3 people like cats, 1 person like parrots, therefore I will buy a lizard. - This information is of zero value as a developer unless you poll 1000s of people.
Azure and NeverYouMind posted great lists, it would be beneficial for you in the long term to research each of these then make a poll from this research, at least that way you will gain more insight out of your polls.
Thanks, I will check those games out and see what I can improve upon. I haven’t played them yet, but I’d like to get the chance. I like historical/fantasy characters, no reason why they couldn’t fit.
Those games are not really comparable to what I would be making. The horror themed characters would be more based on slasher themes rather than classic monsters like in Darkstalkers, the mystic characters in Mortal Kombat and the futuristic and historical characters in Time Killers.
To make it distinctive, I would go for a horror fantasy, not to many of those currently making noise so if you nail it you can pick up a audience that isn’t being properly served at the moment.
