Since the very old and classic version of LS-32, Seimitsu made changes on the main sq gate design, the simpler new one is a mounting update in order to be a LS-32 compatible only while the composite earlier version was a LS-30 rotary stick compatible as well, the sub-gate was also simplified, then they included a shaft cover option followed by a high tension version later (LS-38).
And finally the next and actual update which brings Onrom (bent) levered switches which increases the engagement and diagonal range a little.
Seimitsu never made changes that decreases activation or changes in the throw distance (this one not mentioned by you but worth the info), plus the keyword ls-32 2001 or 2016 refers to your thread only.
The “much larger travel to activate” sounds like a cheap copy of the joystick.
I searched and new model is called LS-300 , then remarked to ls-32 again. with the onrom switches as you told.
My main problem is with the throw distance. I think is larger in the new model, but is only as it seems to me…
I doubt my new sticks are fake copys, they were buyed in arcadeworlduk.com (a well known store).

Im using a shaft extender cause the ls-32 is not high enough in my cabinet… could this be my problem?
2º - Do you recommend me to purchase an ls-38 if is thigh? It has lower throw?
3º - I can do a video with the throw difference between my arcade stick (from 2001) and my arcade cabinet (2018) if it can help…
4º - I searched for ways to reduce the throw, but I found nothing… do you know something?
I just stop reading in the shaft extender part…of course that is the problem. While you’re fishing the middle of the rod is not as bent as the end so of course the bigger the shaft the bigger would be the throw
I recommend you to use Seimitsu SS plate with no sh.extender.
edit: (the fishing analogy is actually silly, i just couldn’t explain clearly cause english is not my language as your situation but what i meant is; when you move this stick, just compare your hand at the sh.extender’s ball (or bat) top, to the original shaft screw and notice how your hand is farther from center than the beginning of the extender, which is where your hand suppose to be). my explanation is week but the recommendation is strong and it will allow you to feel the LS-32 as it should be.
