I love Juri’s idle stance too.
I like Benimaru’s, looks like he’s ready to fuck you up at any second.

Freeman: Just looks like a complete psycho, with the heavy breathing and almost no movement
The walking animation is cool too
Rugal: The way he clenches his fist just seems really cool.
Vice: Not a character I use, but love the hunched over stance
Shermie: No particular reason, just think it fits really well and is memorable. Not really a ‘Fighting Stance’ but thats kinda the idea.

XIII Takuma is godlike for repping that Cat Stance.
Also, I’ve a thing for them one legged stances but Juri + her walk animation takes the cake, one-leg + lazy “why the fuck should I care about you” walk animation is made of win and pancakes.

Heavy D - Such a shame that the US Sports team is so underused. Probably my favourite boxing stance in fighting games. Would be great to see them in the next KOF after XIII.
I’ve always been partial to Ryo’s “serious” Kyokugenryu stance in AoF, the one where he has one hand low and the other nearly covering the face. I’m at work so I can’t go post an example, but I’m sure a lot of FG vets in this thread know it.
Also, K’ has an awesome fighting stance, made all the more awesome in KOFXIII with the “I don’t give a fuck” headroll. 
On the Capcom side of things, Guy’s pose is badass. Dude looks like a ninja (well, the romanticized version anyway), not like that MMA looking business we see in Dead or Alive.
I like Athena’s stance in KOF12. It’s nothing special, but I like the way that she starts to radiate a large amount of psycho power a-la Bison when she stands idle.

Oswald - The dude looks like he’s about to go Michael Jackson on your ass, all that and he’s not even facing his opponents!
Have to agree with Infinidragon on Guy’s stance, it’s fucking badass.

Hakumen. It’s such an awesome pose. You can tell he’s gonna bring a lot of finesse
and power in that swing.
Sol Badguy. Such a relaxed, “not taking this seriously” stance.
Ky Kiske. Really showcases his skill as a swordsman. And it’s really unorthodox.
Johnny. Badass stance that shows him relaxed, yet his hand is at the ready for
any moment’s notice.

Enja.Kazuki’s stance (with arms crossed in front)
Suija.Sogetsu’s Water Emperor stance (resembles crane stance)
Yoshitora’s stance (with crossed arms to reach both the swords on his back and swords at his waist)
Suija’s stance (some water dance with feet constantly in movement)
Nothing says power like Demitri’s stance, simply standing there letting energy radiate off him. Then there’s the way he moves, by simply floating towards you with his arms crossed.
Also, from Darkstalkers, the way Morrigan’s hands were animated never ceases to amaze me, and her walk animation, floating at you with bats swirling around her is nothing to shake a stick at either.
