Fun fact, my uncle was a Vietnam war vet, and due to an accident on the carrier he was on, his hair turned white and it never turned back. A war like future for cable could have scarred him mentally and gave him white hair. Especially since both Jean and Scott are basically gingers.
I think the techno organic virus also contributes to his aging. He has to constantly fight off the virus to stay alive and it strains him both physically and mentally. That plus the bleak war-torn future really take a toll on him.

It takes time for films to be rated.
Basically what Cannonspike said. They were always making the movie to be R rated, but the movie has to basically be complete before it can be processed for a rating and then they have to review everything in the movie itself to give it a rating. That’s basically why on trailers you always see “This film is not yet rated” until the movie actually comes out.
