forgot to add this in my last post…best way to deal with it is to be bison, not sagat 
It really depends on you’re poking abilities with sagat imo. If you can keep bison at bay at least mk distance it’s really hard for bison to get in really on sagat. Most bison players get ancy after getting hit by mk a few times and will try a random jump in cc or roll cc, it takes alot of patience to deal with him but I belive it’s in sagat’s favor. Also bison just cant walk up and cr mk on sagat with out trading with sagat’s cr mk walk up cc is prob a bison’s last resort on a turtling sagat.
