Well, people generally Dont mind a straight up door fee since they know that fee is going straight to the business which is cool. Its understandable. $5 tourneys are also generally a low payout to begin with. Considering 1st place would get a considerably smaller payout than he normally would at a $5 tourney might make some people not go since the players are so spread out. People would much rather pay a 1-2dollar fee if that means they have a chance at a higher payout. From experience, people prefer just to pay a flat door fee rather than pot dipping. Its easier to tell what they are in for and they know what goes where, i suppose.
By all means, not trying to tell you how to do it. Just letting you know how it usually goes inthe scene. I may drop by depending on how busy i am that night.
