Not all vegetables are hearty enough to serve as a replacement for a big slab of meat, but there are a lot of options mushrooms, eggplant, potatoes for example and a lot of vegetarian dishes use fillers like textured vegetable protein, tofu, bread crumbs, etc to give you that full satisfied feeling you get after eating a steak or whatever. With meat as a rule of thumb you should respect it to coax the true flavor out of it, but with vegetables don’t be afraid to play around with them and manipulate them to get a full meal, it takes a bit more effort, but can be just as tasy and filling as any meat dish when done right and it feels good to eat right.
I’m not a vegetarian, but I eat a lot of veggies here are some of my favorite recipes.
Microwaving veggies…gross, I almost never use the microwave except for reheating cooked rice, it makes all food just soggy and gross no reason to really use it outside of laziness of using the stove or oven.
Every so often I would have chicken but that is such a rarity. The same goes for dairy products and among other things that come out of animal. You can say It’s been about a year and a half and so and I am not complaining. I still have a problem in junk food (Popcorn)
Doesn’t really add to the topic, but tons of buildings in Asia are built with suicide prevention nets. Even hotels. Because suicides are common in Asia. That Facebook feed factoid about Apple factories was falsely contextualized and means little to nothing.
Other than that… I ate an avocado lettuce wrap for lunch.
Actually, you can use a microwave to quickly steam veggies easily. They come out really good too. I still prefer a wok for example but when I’m short on time then a microwave can help a ton. If you get soggy veggies in a microwave you’re doing something wrong.
The worst way I’ve seen veggies cooked is boiled. It cooks all the color, flavor, and nutrients out of them. Yuk.
Sautéed with a ton of butter is good. Steam is good too. I’ve read some thing somewhere that seem to suggest that microwaving kills some of the micronutrients in vegetables. Anybody know?
Microwaving vegetables kills some of the vitamines for sure, but so do some other ways of preparation.
Microwaves are even good for some of them, vit C/B1 for e.g. Others like A or E aren’t that sensitive.
Bake, grill, cook - mix it up, make the most of it. The more diversity, the better.

Nutrients are water soluble so the more water and heat you use when you cook vegeteables the greater the nutrient loss, for example boiling veggies will leave you with basically no nutritional value. Sauteeing veggies on medium heat is definitely thr way to go, as a general rule of thumb I try to cook them as little as possible.
Yeah when steaming them you don’t want to steam them too long. Basically, if it lacks color, you fucked up. Veggies should be bright and vibrant when cooked.
Cooking anything beyond a certain point will start to remove the nutrients from it. For example, even meat, if you cook it too much it becomes carcinogenic and all the nutrient loss that comes with it. Steaks for example, should never be more than medium, past that point, you start losing stuff.
I’m vegetarian. I did it once for 3 months and I felt great. Then about 7 months ago I decided to give it a shot for the long haul. You really find out a lot about yourself and what you really like to eat. A lot of the vegetarian and vegan food is actually REALLY good. If any of you live in SoCal and are close to Hollywood, vegan, veggie, or meat eater, I suggest hitting up Veggie Grill next to Amoeba Records. Order their Buffalo Wings and tell me that does not taste the same as boneless wings.
All of that being said, I do miss chicken the most out of any meat.
When boiling or steaming veggies you should put them in ice waters mediation after cooking for at least as long as you cooked them to immediately stop the cooking process and let them retain their color.
I’ve been vegetarian/vegan(I go back and forth) for about a year and a half now. I can echo the same sentiments here, overall I feel better and I really don’t have the desire to go back nor do I miss beef and pork much. It’s refreshing to see a positive veggie thread on SRK, without much OMFG HOW DO YOU NOT EAT STEAk!!..kind of shit even though it was there 1st page. I will say without a doubt especially being black, I’d agree I miss chicken the most.
