personally, I think your team chemistry could be better. I like the cable\sim stuff, I think that would work well. Sim\cable ron to an extent might be a very good team.
sim will be build the bar, cable ron will have the chance to dump it if sim is effective through out the fight. Also, sim’s assist can be useful to cable for zoning. I’d probably get the AA flame that goes up since tron covers a horizontal angle.
Iron man maybe. He works pretty well with Doom and can hold his own. Sentinal and Blackheart are also fun. I would put Dooms AA assist as the third character though unless you are gonna use him as a battery for someone that runs through bar like Cable.
Put Blackheart on point to build bar for your other characters. Icebeam will help with ground control as you are raining demons and does good chip. I would pretty much reverse your order completely and use iceman mainly for his assist.

I am using
Guile AA/ xxxx / Sentinel Ground . I need a 3rd guy that isn’t cable.
Also should i be using a different assist / order?

Played MvC2 since about 2005, but never really dabbled in some of the more advanced strategies, so I’m somewhat scrubby. I usually use a Gambit (proj)/Cyclops (AA)/Iceman (proj) team. Any suggestions for that?
Sent works best if you want a hard focus with Venom on point. Drones can cover Venom getting in and can be subbed for Doom if your trap is about to be broken. Main issue is that team is SOL if Venom goes down without doing his job, because all either DD/Sent or Sent/DD can do is lead camp- they lose if they don’t got a lead to sit on unless the opponent does retarded things while Sent has meter.
Cable gives you a better second point for the guys you have in the back and can work if Venom is having issues with pressure as an AA, but offers less overall in the back then Sentinel does when it comes to keeping people eating Fangs 'n Rocks.
If you’re opposed to the big 4, a strong team that basically rides the ‘chip you to death’ tactic is Venom/Ruby/DD, since Ruby can lock someone getting too far out for Rocks in place and Ruby/DD can do a similar trick to Venom/Doom with low poke strings and a Doom Drop into Sublim. Another good option might be Blackheart, who’s a natural pair with Doom in general and can pin down someone who tries to avoid getting locked in by going up and staying up (Storm, Dhalsim).
Finally, as with any team with Doom, pocket Strider is definitely an option, especailly with a strong meter builder like Venom to shove in the front.
