I made pizza again. Once yesterday and again just now. Had enough dough for 2 small pizzas that I let ferment for almost a week in the fridge. Capsule review:

Don’t get me wrong. Things are actually getting better. These pizzas were good, just not good enough to sub for any pizza chain. Maybe I’ll find the perfect dough recipe one day and really bring this home, but I may be too much of a Pizza snob at this point to ever appreciate my own efforts.

Just mess with the dough. Letting the dough sit for so long probably aint the best for pizza. I dont make the shit, my lady does. It took a number of pizzas to get the dough the way we want it.

P.S. My lady and her ex husband use to own a pizza joint.

If you let the dough sit too long after forming the pie the air will escape and you’ll have a flat pizza that doesn’t rise.

Instead of beating yourself up for not being able to clone your favorite pizza joint, you might be happier making the pizzas they don’t.

Grab a regional Italian cookbook and bang out some of those combinations you can’t get locally.

I get what you guys are saying, and might try switching things up in the future.
But from the start, my pizza making has been about matching the quality of the places I like. The latest batch of attempts started when I looked at my budgeting app and found the money I was spending on my favorite place around here was insane. Like, you’d swear it was code for drugs or a strip club. My main motive was saving money. I’ll experiment, but am a bit sad I can’t get at least to 80% like I can with everything else.

Cuz like…if they have a full on brick oven you are never going to replicate that at home. That’s like…80% of the pizza right there.

Don’t know what they use. I mean, it’s a professional pizza place that’s less of a chain than, say, Little Caesar’s or Dominoes. So, it might have a brick oven.

You should ask. I bet they will tell you.

There’s a few SF5 kids getting into 3S, actually a strong handful of them. I’m not great at the game so there isn’t a lot of really useful game specific info I can give them on the game. But if you wanna bop some fools to help them get better, they’re eager to learn.

Just listed some items on eBay. Haven’t really done so in almost a decade when I got out of Heroclix (competitive miniatures game based off popular franchises, usually comic books).

Yeah. It’s was 20 step at some school in Cali. It was known the world over in the roller skating, BMX and skate boarding communities

They were tore down in 2019.
