Also, that weird Next Episode preview kind of confirmed it to be The Hound’s Bro. The Mountain (IIRC) is the strongest individual in King’s Landing and would be a logical choice for a champion.

Trial by combat is supposed to be you vs them unless someone steps in for you (and/ or them.) This is why his decision is so serious. Tyrion doesn’t have a chance physically vs essentially anyone on the opposing side, thus condemning himself to a near certain death.
