Capcom vs Snk 1 had some of the best stage designs I’ve seen. Too bad that game was boring as hell 
i’m surprised nobody mentioned garou stages. The 3 stages of terry are my favorites (one for each round, in the train), but i can’t find gifs of them with the complete animations.
But freeman stage is cool too

Nobody’s said the burning house in Last Blade 2? So iconic.
Always loved Rachel’s original stage with the red roses from Blazblue, the floating rose petal effects when the characters move around is nice as well.
I never particularly liked this game (or any Marvel game outside of MVC2) but this stage was pretty cool.
Tower of Arrogance in Vampire Savior. You’re defying gravity fighting on the side of a skyscraper building, so epic.

yuki (this one have a lot of interactions…if you throw the opponent in the ground, the snow will come off that part of the ground. If you hit the opponent in the corner, snow will fall from the trees and rooftops of that part)
