There is no way to really beat a firearm. Even the rare few martial artist who can deflect projectiles say there no defense from a real bullet.
If you are close enough you can attempt to disarm someone, but that is so conditional (you have to be real close) it’s not even worth mention.

Why you think that “Samurai” who can “deflect bullets” only deflect a plastic BB and not real rounds.

And in that first image, note that the guy is cutting in half a plastic BB from a low velocity bb gun.
Bullets have a faster muzzle velocity, most bullets speeds break the sound barrier and would most likely shatter the harden blade of that Katana.
(harden materials are prone to stress fractures, thus shattering).
