I think you might be able to find some at Golden Computer Arcade in Sham Shui Po or maybe Sino Center in Yau Ma Tei.

My friend and I split an order through a website. I believe we used http://www.arcadespareparts.com/
Though they are based in HK I believe you still have to buy through the site and can’t just walk in. Other than that, I am yet to see any store that sells buttons individually myself.

There will probably never be an extreme vs machine in HK - hong kong arcades don’t seem to be able to access whatever internet network is required for that game to work. That’s why you only see GvG NEXT and Federation vs ZAFT II machines. Best bet is to buy a PS3, or let me know if you’d be interested in some local matches some time.
