In EWJ2, you have no control over Jim (Bob’s the end of the first level). EWJ1, you run into him.

I’m surprised nobody’s mentioned Goombas or Koopas yet.
Any gap in a UC game.
I remember fighting Bebop or Rocksteady in the NES TMNT game from Konami. There crates on the right side of the screen where you could jump on top of them and hit them and he has no chance of hitting you back. You can see it done in the Angry Video Game Nerd’s review of the game.
Desert level boss in Sonic and Knuckles.
There are three elements to this battle: 1. Wait. 2. Jump into the sand. 3. Jump back out.
The very first enemy encountered in Mega man X. You have to be a damn fool to not understand that you need to push X to kill it in 3 shots.
As for easiest boss? With out a doubt Spark Mandrill from Megaman X as well. stand still, press X with Shotgun Ice equiped about every 1.50 seconds.
Surprised no one mentioned Sin in FFX. You get auto-revived whenever you die, so you can just tape the attack button down and go make a sandwich or something.

Glass Joe used to beat the crap out of me cause I didn’t know how to play the game. I would mash buttons, turn pink, and didn’t know what to do afterwards.
Easiest boss for me would be Sonic 3 1st minor boss. Just jump on the top and bounce. Don’t know why they didn’t use Knuckles’ version of the boss; the one that fires missiles into the air so you can’t bounce on the top.
Honorable mentions:
That creepy grey coat guy from Home Alone 2 SNES. Blast him with two shotgun blasts and he’s done. If you don’t have the shotgun, you’re screwed.
Bebop in the TMNT Arcade game. Hit him, then move. Rinse and repeat. To this day, players still swing at him wildly and get their jaws rocked.
Krusty Balloon boss in the Simpsons Arcade game is also a pushover. I pity anyone who wasted tokens on that boss. I made this video a while back on how to beat him without taking a hit:

Hulk Davidson in Viewtiful Joe 1.
Either Yu Yevon or Sephiroth at the end of FF7.
So is Hulk pressing a button to one-shot a guy who doesn’t put up any resistance.

You get pretty OP in star ocean 2. Hit the point where enemies kill themselves by attacking you.
-The Fear (stamina kill) easiest Extreme Boss
-The End (cut-scene kill) Tough when going for a stamina kill, but easy if you know how to follow him.
-Volgin, you can roll into him for a Stamina Kill. Super easy boss, even on Extreme.
Hard Man in MM3 was one of the easiest Megaman bosses that I remember, which I always thought was funny considering his name.
Vol Opt in Phantasy Star Online. His first form wasn’t too terribly easy, but very doable without getting hit, but you should feel embarrassed by ever getting hit by form 2. A friend of mine solo’d the thing with a L9 Fonewearl. Pathetic.

I forgot about these guys in demon souls their in the prison stage, they just stand there and get in your way, other then that they dont do anything but block your way and wave their hands around
