All I’m doing is condensing this information into a single post. Ajural at GameFAQs is the source - see this post for more details. He’s not really editing information into his earlier post when I’m writing this, so there’s a lot of extra stuff revealed in posts beyond the first one.
The information in this post was gathered by checking the values of stats using a memory editor/viewer during gameplay in the steam version of the game. It’s not known if the console versions have the same values, but it’s probably the case.
Stat Allocation
Health: +10 per point
Stamina/Ki: +4 per point; 100 points = 1 bar (obv)
Damage stats: +0.01 to base multiplier per point
The base multiplier for damage stats varies by race/gender/level. Bonus damage from stat allocation is additive to it so 100 points is a larger % increase to damage if the class has a lower base multiplier - though the absolute value added to damage remains the same (i.e. if 100 points adds 10 damage to an attack, it adds 10 damage to that attack for all races before including any further race-specific buffs e.g. Super Saiyan, saiyan low health passive, human full ki passive).
Basic attack affects the free ki shots as well.
Gear Stats
Health: x +/-0.2% per arrow
Ki/Stamina: x +/- 1% per arrow
Damage stats: x +/- 0.7% per arrow
Each gear piece’s value is multiplied against the next, so if one gear piece has 2 health and another has 1 health, you get a multiplier of 1.004 x 1.002 = 1.006008, and so on. This effect means that negative arrows are slightly heavier as can be demonstrated by multiplying 1.02 and 0.98: 0.9996. The final multiplier is multiplied against the base stat (including additional stat points from stat allocation)
Some gear has been found to not change stats by the amount shown on the gear; for example Beerus’ set penalty to health doesn’t seem to apply.
Body Type
Height multiplies health by 1.05 per stage on the height chart. From smallest to tallest:

2: 1.05
3: 1.1025
4: 1.157625
Height also gives a benefit to speed. Shorter characters move faster, by the same pattern, from smallest to tallest:

2: 1.1025
3: 1.05

Weight modifies the damage dealt by physical and ki attacks, as follows:
Slim: 100% ki damage, 66.6% physical damage
Medium: 83.3% ki damage, 83.3% physical damage
Heavy: 66.6% ki damage, 100% physical damage
Gender
As a general rule, female characters have higher Ki Super and Strike Super damage. Male characters have higher health and basic strike/ki shot damage. The exact difference varies per race.

It’s unknown at present if the races have similar stat relations at level 80 (there’s claims that male Majin ends up with lower health than Namekian), though the same race genders will probably have roughly the same difference to each other.
Movement Speed
Movement speed increases relative to level. Tests with a female Saiyan show around a 21% increase to normal movement speed and 15% increase to dash speed between level 1 and level 80. For each race’s level 1 movement speeds (first letter = race, second letter = gender):
Ground speed: Mf (1.02) > Sm (0.86) > Sf=Hf (0.82) > Hm (0.78) > N (0.741) > F (0.737) > Mm (0.66)
Air speed: F (1.02) > Sm=Sf (0.86) > Hf (0.82) > Hm (0.78) > N=Mm (0.741) > Mf (0.737)

Racial Passives
Majin: 25% incoming damage reduction when stamina is full
Human: 20% outgoing damage increase when ki is full
Saiyan: 20% damage boost after passing 25% HP; 20% damage boost after dying and being revived (stacks multiplicatively, total 44% damage boost)
Frieza: 30% increase to movement speed at low health
Transformations
Kaioken:
+10% to all attacks
+15% to Ground and Air speed, +10% to Dash and Step Dash speed/distance.
Kaioken x3:
+15% to all attacks
+20% to Ground and Air speed, +15% to Dash and Step Dash speed/distance.
Kaioken x20:
+15% to all attacks
+25% to Ground and Air speed, +20% to Dash and Step Dash speed/distance.
Super Saiyan:
2% to basic attacks, 1% to basic ki shots
2% to strike supers, 1% to ki blast supers
Reduces all damage taken by 10%
+10% to Ground, Air, Step Dash and Dash speed/distance.
Super Vegeta:
1% to basic attacks, 3% to basic ki shots
1% to strike supers, 3% to ki blast supers
Reduces Ki damage taken by 10%
+10% to Ground, Air, Step Dash and Dash speed/distance.
Super Saiyan 2:
5% to basic attacks, 2% to basic ki shots
5% to strike supers, 2% to ki blast supers
Reduces all damage taken by 10%
+15% to Ground, Air, Step Dash and Dash speed/distance.
Super Vegeta 2:
2% to basic attacks, 5% to basic ki shots
2% to strike supers, 5% to ki blast supers
Reduces Ki damage taken by 10%

Fighting Pose B:
