EDIT: Hey Ron, I’m having some trouble here: I’m trying to do Alex’s Knee Smash setup w/ the parry, but it’s not working. I parry an incoming air attack, then go Alex’s standing medium punch and follow it up with the Knee Smash, but I can’t seem to catch them in the grab afterwards.

Here are a couple of tips for your P-Groove:
Anti-Air vs Parrying.
A common mistake for beginners is to often parry the opponent’s air attacks. Instead use anti-air attacks. E.g., Vega has a pretty reliable standing HK that swats most things outta the air. I’d recommend using that for the most part. Parrying lets the opponent have opportunities to do empty jumps, which is a much higher risk for you. They can empty jump into grabs, or into crouch short supers if they catch on to your parrying. The the anti-air pretty much shuts them down. The few exceptions to watch out for is if the opponent is Pgroove, Kgroove, Agroove, or have air supers; parring, just defending, activate coustom combo, air super. Other than that, Vega’s HK is fairly solid. So against a c-guile opponent for example, there’s really nothing he can do in the air, so he’ll just have to eat the HK.
Short Jump More.
Especially with Vega’s HK. That shit is so fast and annoying. You can mix up with empty jump throw. Or empty jump c.lk, s.lk, super. Guile’s air HK has good reach.
