Considering how small Chun gets when she crouches, it’s a viable tactic to crouch behind that table to hide any pokes you may throw out. Also, Nuki was hovering and seemingly wanted to protect that space, not just because it was out of Chun’s range but it was a vantage point that was… Fresh? I feel like that table is bigger in OE come to think of it…
